Eco-responsible month - Anti-food wastage

As part of the eco-responsible month, to raise awareness among our patients and employees about food waste, our establishment is starting a week today to collect the uneaten bread from each meal.
This study, carried out in partnership with Dupont Restauration and C2DS, will enable us to quantify our food waste, and the aim is to use this data to implement corrective measures.
40 tonnes of food are wasted every second in the world
The challenges of reducing waste
Environmental
Because of the energy needed to produce, process, preserve, package and transport food, food waste represents the production of 15.3 million tonnes of CO2 in France. That's 5 times more than the emissions from our domestic air traffic.
Economic
10 million tonnes of food are thrown away every year in France, resulting in an estimated loss of €16 billion. That's €238 for every French person every year.
Ethical and social
Throwing away food is all the more unacceptable in the context of a global food crisis, but also in the current social context specific to each country, including France where it is estimated that 1 in 10 people find it difficult to feed themselves.
